Fraksinasi Peptida dari Hidrolisat Protein Ikan Selar (Selaroides leptolepis) Fractination of Peptide from Selar Fish Protein Hydrolysate (Selaroides leptolepis)

Yellowstripe scad (Selaroides leptolepis) is a fish with a fairly wide distribution with abundant production and has a high protein nutritional content. Peptides derived from fish protein hydrolyzate have great benefits for the development of functional food products. This study aims to obtain the fraction that has antioxidant activity and ACE inhibitor from the protein hydrolyzate of yellowstripe scad. The research was conducted by fractionating the peptides using a chromatography column, then characterizing them. The results showed that the fractionation with gel filtration column obtained 2 fractions, namely fractions A and B with IC50 4,737.95 ppm and 529.42 ppm respectively, and ACE inhibitor activity of 90.65% and 96.61%. Peptide fraction B has more potential as antioxidants and ACE inhibitors.
